Garlic Rosemary French Fries


I'm sorry I have been so out of touch lately, I am in Missoula, Montana visiting Jeremy's family and was in Hillsboro visiting my family last week, and things have been pretty hectic trying to make time to see all of my family and old friends and catch up with everyone. It has been very enjoyable, but also time consuming. Yesterday me and Jeremy drove from Oregon to Montana, and on the way we stopped at Burgerville for some food for the road. Burgerville is a Northwest fast food chain that uses fresh Northwest ingredients, and makes amazing burgers. They had rosemary shoestring fries on the menu, which grabbed my attention immediately. We ordered some, and they were fantastic!! I decided to try and recreate them tonight, but I added some fresh minced garlic and baked them instead of frying them. We had some BLTs for dinner, and I figured the garlic rosemary fries would go great with them. This ended up being very true, they made quite the pair! I think they would go great with a nice barbeque or steak, too.


Ingredients:

2 lbs Yukon Gold Potatoes, peeled and cut into 1/4 inch thick sticks
3 Tablespoons Olive Oil
3 Tablespoons Fresh Rosemary, minced
4 Garlic Cloves, minced


Mix together the olive oil, rosemary, and garlic. Allow them to sit together for 1 hour, then preheat the oven to 400 degrees Fahrenheit. Place the potato sticks in a large bowl. Pour the olive oil mixture over them and toss until they are lightly coated. 


Evenly distribute the potato sticks over a large baking sheet and drizzle any remaining olive oil mixture from the bowl over the baking sheet. Place the sheet in the oven and bake for 35-45 minutes, or until golden brown, turning them over halfway through.

  2. Oh my goooosh, I LOVE Burgerville. It makes me miss Oregon City all the time. I had no idea they had rosemary fries! You totally just blew my mind! These look fantastic, by the way. Perfect use for my herb garden :)

    @Chelsea: Seriously, Burgerville is amazing. There is no other place like it! Sometimes in the hot LA summers I find myself craving a nice, cool marionberry milkshake. Almost makes me take the drive up to Oregon to get one, they're so good!!
